			Ingredients
			   2 lbs (.9 kg) fresh spinach
4 medium sized potatoes
1  egg
 1 cup (225 ml) milk
 1/2 lb (.2 kg) Cheddar cheese
  Salt
Red Hot Pepper
Pinch of nutmeg
 2 tbsp (30 ml) butter
  Preparation
			  Boil spinach until soft; then drain.
 Boil potatoes and mash them, adding salt, 1 tbsp (15 ml) butter and 1/2 cup (125 ml) milk.
Use remaining butter to grease a straight-sided ovenproof platter.
Alternate layers of spinach and mashed potatoes, ending with spinach.
Grate the cheese coarsely.
 Whisk the egg in a  cup, add rest of milk, cheese, salt, pepper and nutmeg and mix thoroughly.
Pour the mixture onto spinach.
Bake in pre-heated oven at 400 deg F until top is crisp, taking care not to burn it.
Serve  hot.
  Comments
			 Can also be served on toasted wholemeal-bread slices. A trace of thyme can also be added just before serving.
